Job Description:

We are currently in the process of shortlisting candidates for the role of Executive Chef – Culinary Trainer. The selected candidate will play a key role in standardizing recipes, menu engineering, and training cooks and assistant cooks on advanced marination and cooking techniques. This position requires expertise in raw material quantification, drafting SOPs for dish preparation, meticulous mise-en-place planning, and production forecasting for the kitchen. The successful candidate will also be responsible for training and implementing HACCP protocols in kitchen activities.

Qualifications:

• Minimum of 7 years of experience in production with expertise in multi-cuisine environments.
• Successful completion of culinary courses in industrial catering.
• Proven experience in batch and bulk cooking operations.
• Hands-on experience with modern cooking equipment, including Combi ovens, Bratt pans, Griddles, Deck ovens, and Rotatory ovens.
• Age between 35-40 years.

Key Responsibilities:

• Standardize recipes and implement menu engineering strategies.
• Train cooks and assistant cooks on advanced marination and cooking methods.
• Develop a raw material quantification module for recipes.
• Draft SOPs for dish preparation and ensure meticulous mise-en-place planning.
• Forecast kitchen production to optimize efficiency.
• Lead the implementation of HACCP protocols in all kitchen activities.
